Nascido como filho de um dono de loja de doces, aos treze anos Poppa Chubbt começou a tocar bateria. Pouco tempo depois, ele começou a ouvir a música dos Rolling Stones e começou a tocar guitarra. Embora ele cresceu na década de 1970, Poppa foi influenciado por artistas dos anos 1960, incluindo Jimi Hendrix e Cream, entre outros.
Nos seus vinte anos, embora ele principalmente tocava música blues, ele também trabalhou como backing vocal para o poeta Richard Hell Punk. Poppa chamou a atenção do público depois de ganhar um concurso nacional de talentos de blues patrocinado pela KLON, uma estação de rádio pública, em Long Beach, Califórnia.
Ele venceu o concurso Novo Artista do Ano e como resultado foi escolhido como a apresentação de abertura no Long Blues Festival Praia em 1992.
Poppa tocou em mais de 200 clubes por ano na década de 1990. Sua primeira gravação foi pelo selo Sony/Okeh Records, com a estreia Booty and the Beast, foi produzido pela Atlantic Records engenheiro e produtor Tom Dowd, que trabalhou em gravações de artistas como Aretha Franklin, Ray Charles, e Wilson Pickett.
Em 1994, Poppa lançou vários álbuns em seu selo Laughing Bear, incluindo It´s Chubby Time e Gas Money, antes de ter obtido um contrato de gravação com a Sony Music/Okeh Records para Booty and the Beast, seu álbum com uma grande gravadora em primeiro lugar, que foi lançado em 1995. Em 1996, foi lançado uma gravação ao vivo de Poppa Chubby, Hit the High Hard One. Dois anos depois, One Million Broken Guitars foi lançado pelo selo Lightyears Records e Brooklyn Basement Blues em 1999.
Em 2000, Poppa assinou com o selo Blind Pig e lançou How'd a White Boy Get the Blues? em 2001. O disco acabou por ser uma partida leve da direção musical e usual de Poppa, incorporando elementos de pop contemporâneo e hip-hop.
The Good, the Bad and the Chubby, lançado em 2002, foi um exemplo do desenvolvimento de Poppa Chubby nas habilidades de compositor e incluiu o 11/09 no álbum "Somebody Let the Devil Out". O selo Blind Pig lançou uma coleção de gravações iniciais de Poppa Chubby, The Hungry Years, em 2003. Um ano depois, lançou Peace, Love and Respect.
Dois álbuns anteriormente disponíveis apenas na França - Live at FIP e Wild - foram compilados pelo selo Blind Pig e lançado como Big Man, Guitar Big em 2005, seguido por Stealing the Devil's Guitar, um ano depois. The Fight Is On, foi o primeiro álbum de estúdio após um hiato de dois anos.
Foi lançado em fevereiro de 2010 na etiqueta Provogue na Europa, e Blind Pig na América do Norte.
