Ele estudou como violinista clássico profissional no Conservatoire National Supérieur de Musique de Paris. Sua atração pelo jazz é devida às músicas de Miles Davis e de John Coltrane.
Trabalhou com Stephane Grappelli, a Mahavishnu Orchestra de John McLaughlin, Frank Zappa, e publicou diversos discos nos anos 70, 80 e 90.
Ponty foi pioneiro na utilização de um violino elétrico a 5 cordas, equipado de 1 corda baixa afinada em Dó. Utilizou também um violino elétrico a 6 cordas chamado Violectra, com baixos em Dó e em Fá.
Seu pai era professor de violino e iniciou Jean-Luc com a idade de cinco e sua mãe lhe ensinou piano. Ele deixou escola aos treze para praticar seis horas por dia na esperança de se tornar um violinista de concerto. Com quinze foi aceitado no Paris Conservatoire, para ganhar o primeiro lugar quando tinha dezessete.
Ele tocou com a Concerts Lamoureux Orchestra durante três anos, ao mesmo tempo que, graças às influências de Grappelli e Stuff Smith, ele se interessou pelo jazz. Estranhamente, Ponty começou a tocar jazz primeiro com clarineta e sax-tenor e somente em 1962 é que utilizou o violino.
Depois servir o Exército francês (1962-64), Ponty entrou de ponta cabeça no jazz, atuando com seus quartetos e trios na Europa, gravando com Grappelli, Smith e Svrend Asmussen no álbum "Violin Summit".
Visitou os EUA pela primeira vez em 1967 para participar do Monterey Jazz Festival. Enriqueceu sua música com experiências americanas em 1969, ao lado de Frank Zappa e o George Duke Trio, e ao retornar à França, formou um grupo de free jazz, o "Jean-Luc Ponty Experience"(1970-72), antes de se instalar nos EUA e participar do "Mothers of Invention" de Zappa.
Ele viajou e gravou com a Mahavishnu Orchestra em 1974-75 e então criou sua própria banda, gravando uma longa série de álbuns para a Atlantic, apresentando um som que ia dos aspectos mais vulcânicos de fusão ao mais lírico do europeu, sem esquecer da extensão dos idiomas de Mahavishnu.
Em 1983, Ponty trocou as engrenagens e recarregou as suas baterias criativas com o sintetizador. Começou com o álbum "Individual Choice", onde ele construiu novos padrões de sons eletrônicos com ajuda dos seqüenciadores.
Ele continuou nesta direção quando assinou com Columbia em 1987.
Mas em 1991 com o álbum "Tchokola", Ponty estava novamente no movimento, deixando de lado os sequenciadores e gravando com instrumentistas da África Ocidental, o que resultou em novos padrões de criatividade para a sua música.
